After 18 years in the Londolozi kitchen, Eric Ubisi went on a journey to Cape Town, let’s call it his first Food Safari. A whirlwind two days in the Mother City, Eric was whisked around by Anna who was determined to show him as many of the sights, scenes, flavours and tastes. In Eric’s words ‘an unbeleiveable experience’, one that he had only dreamt of.
The first stop on our whirlwind tour was the Cod Father where Eric chose his fish of the night, Kingklip. For someone who does not usually eat fish, this has become a firm favourite!
He decided Kingklip was the way to go and having it freshly caught off the line, weighed and grilled in front of him, he now knows that it is the only way he will serve his fish dishes.
Grilled up with a squeeze of fresh lemon, his smile says it all.
Next stop, the Neighbourhood Goods Market, there is nothing more exciting for a chef to experience a market. After hearing all about Anna’s Market visits on her various Food Safari’s, this was on the top of his list.
The highlight of his Food Safari, Eric was in awe of all that was available and has picked up some very exciting new ideas, keep an eye on the up and coming recipes that he will be cooking at Londolozi.
Colour, flavour and texture everywhere! So inspiring.
Visits to deli’s and sampling of all, Eric now knows more about quality than ever before.
Then…the dream of all dreams came true. For his entire life, Eric had only ever read and heard about this mountain in the shape of a table, where you were able to see the ‘whole world’, now was his time!
After an intrepid ride on the cable car, he was finally on top and could not believe his eyes.

No trip to Cape Town is complete without a quick stop at the Aquarium – Nemo’s, penguins, sharks and eels were all highlights.
One of the greatest lessons for Eric to bring back to the Londolozi kitchen was after a high tea at the One & Only hotel. From savoury to sweet he saw how to bake, present and garnish all the necessary elements to satisfy our Londolozi guests sweet stomachs.
After a delicious breakfast at Manna Bay we visited one of the worlds best culinary institutions, Silwood Kitchen. A place where many Londolozi student chefs and Executive Chefs have graduated from. We look forward to having more of our Londolozi chefs graduate from here with a training programme that Anna is putting together in the future.
Enjoying a different style of fish and chips by the sea. Eric’s biggest fascination was that the waves never stopped and made such a beautiful sound.
As always, in the Londolozi kitchen, we like to satisfy out sweet stomachs and what else than a delicious, home made Gelato to wrap up the Food Safari.

Fantastic Eric! I’m so happy to hear that you got to Cape Town and finally had a chance to see Table Mountain! It is such a beautiful city, with so much to see and do and taste as well, of course! It looks like you had a great two days there with Anna and I look forward to sampling more of your wonderful creations when we are back at Londolozi again!
