At Londolozi we specialise in freshly squeezed juices. The Londolozi kitchen is fortunate to have a seriously hot juice squeezer, however, you can use a high speed blender for the softer fruits eg. Melons, pineapples etc, should you wish to make your own fresh juice at home.
The pineapple is not indigenous to South America and is said to originate from the area between Southern Brazil and Paraguay, however it is important to note that little is known about the origin of the domesticated pineapple.
Pineapple is a cholesterol-free source of many nutrients, especially vitamin C and manganese. Pineapple is low in both fat and protein. The all-seeing “eyes” of the pineapple are created by individual flowers that huddle tightly guarding a single central core. The eyes closer to the base conceal the sweetest and juiciest area of the pineapple, though the many health benefits of the fruit can be found everywhere.
Pineapple is high in antioxidants and contains a troop of vitamins and minerals that aid in digestion, immunity and the functionality of almost all body systems. The natural enzyme, bromelain, makes it useful as a meat tenderizer. The bromelain digests proteins, so it softens the connective tissue in cheaper cuts of meat. You cannot use fresh pineapples or juice in gelatin because the bromelain digests the protein in gelatin and keeps it from setting.
The addition of mint to this juice freshens it up and is a perfect beverage for a hot summers day!
To garnish the glass – cut a long wedge of pineapple and slide onto the side of the glass or cut up chunks and put them in a jug.
**Anna’s Tip – When you have skinned the pineapple, place the raw body of the fruit in the freezer before juicing, then it is ice cold!**
