Great info!
I’d add that if you enjoy a red much more than a white, (or vice versa) then forget typical pairings and drink what you like. My wife and I have had some great (lighter) reds with fish and my friend loves white with steak…whatever…
Also, I ‘ll second that Waterford Cabs are great.
Lastly, Jordan in South Africa (Stellenbosch)is different than Jordan in US (Napa).
Both are very good however.
